Smoothies

So sorry I wasn't able to update my blog these past two weeks; it's been kind of busy.
Well, anyhow today I wanted to talk to you about smoothies!! Yum! Smoothies are a delicious treat that you can personalize any way you want to. You can have them anytime and they are really versatile. Here are some of my favorite smoothie recipes:
Apple cinnamon smoothie:
1/2 cup chopped apples
5 tablespoons milk
3 tablespoons soymilk
1/2 cup vanilla yogurt
1 teaspoon vanilla extract
2 teaspoons cinnamon
2 tablespoons honey
2 tablespoons maple syrup

Blend and serve.

Avocado smoothie:
1 Avocado, cut into chunks
2 tablespoons honey
2 tablespoons sugar
7 tablespoons milk (might need more, it depends on the ripeness of the avocado)
1/4 cup vanilla yogurt
1/2 teaspoon vanilla extract

Blend and serve.

Lemon blueberry smoothie:
2 teaspoons lemon juice
1/4 cup blueberries (either fresh or frozen and thawed)
1/4 cup yogurt
5 tablespoons milk
2 tablespoons sugar

Blend and serve.

Today I wanted to share some quick and easy breakfasts that teens can make while trying to run out the door to the bus stop. Here are a couple of ideas. Each recipe makes 1 serving.

  • Pancakes - make your favorite pancake recipe and freeze. Then, pop it in the microwave for 30 seconds until thawed. Ta-da! (you can also do this with French toast or waffles.)
  • Make a fruit compote- chop your favorite fruit and place in saucepan. Add a tablespoon of sugar(optional) and some lemon juice. Turn the heat on to medium. Stir until fruit is tender and juices are flowing. Serve over yogurt and/or your favorite pancake/ waffle.
  • Try a smoothie. Blend 1/2 cup of your favorite fruits (frozen or fresh) with 1/4 cup yogurt and 1/4 cup milk. Add 1/8 teaspoon vanilla extract and stir.
  • Eat an avocado. I know it sounds weird, but its so delicious! Halve an avocado and slice without taking the flesh out of the peel. Sprinkle on some cinnamon sugar or maybe some maple syrup or honey and you're done! This tastes really good because its almost like a custard; smooth, creamy and sweet!
  • Make an omelet. Whisk one egg and some salt and pepper in a bowl. Pour in oiled pan over medium-low heat. Sprinkle with whatever seasoning you want (herbs, spices etc.) and cover. Cook for about 2 minutes or until egg is firm. Flip and cook another 30 seconds. Slide onto plate and serve.

Kale is very healthy and full of vitamins. It is a very fun vegetable to use because it is versatile. You could make it into a pasta dish, a salad or my favorite; KALE CHIPS!! I know, I know, you're probably thinking " I prefer potato chips". But even though these will never replace the spot potato chips have in your heart, these are healthier and just as tasty. Here are some of the flavorings you can use:



Chili powder

Garlic

World cuisine spices- cumin, sesame seeds, soy sauce, etc.

Salt

Black pepper

Any seasoned salts you have

Lemon zest

Dried herbs - thyme, basil, rosemary, etc.

Any type of cheese



Here's how to do it:

Tear kale into bite sized peices. Toss in a bowl with some olive oil and the seasoning(s) of you choice. Make sure that each kale leaf has some seasoning on it. Spread kale on baking sheet lined with parchment paper and bake at 375 degrees for 10-15 min or until crisp. Enjoy!
