Cheesy Bechamel with Mushrooms and Onions
This is a creamy, simple dish that is so quick and easy to whip up for dinner! This recipe serves one but you can easily double or triple the amount. A Bechamel is a creamy cheese sauce. It may sound fancy but its oh-so simple. This really is the ultimate meal!!
Bechamel sauce:
3 tablespoons of cheese (your choice)
1/2 a tablespoon of flour
1/2 a tablespoon of olive oil
5 tablespoons milk
Start by placing the flour and oil in a saucepan over medium-low heat. Stir this mixture for a few minutes to cook out the raw flour taste. Next, add the milk. Stir this often but not constantly until it thickens to your liking. Add the cheese and stir until melted. Serve with mushrooms and onions (recipe below) and your favorite pasta. Enjoy!
Mushrooms and onions:
2 cloves garlic, mincing
1/2 inch piece of ginger, grated
1/4 cup mushrooms, sliced
1/4 teaspoon lemon zest
1/2 a teaspoon lemon juice
1/16 cup onions, julienned
Throw everything in a pan and cook over medium heat until cooked to your liking. Serve with above recipe and pasta. Yum!
